Carolina Style Pulled Pork

Carolina Style Pulled Pork Get this recipe started the night before you want to eat. It takes about ten minutes to get it in the crockpot and then you will come home to the sweet smell of pork. 1 Pork Butt 1 yellow onion 2 T Salt 1 T Cracked Black Pepper 4 cloves garlic sliced 1 Bay Leaf 2 T Dijon Mustard ¼ cup cider vinegar 2 T mustard powder 2 cups chicken stock ½ cup fresh parlsey chopped Slice pork into two inch cubes and put into a crock pot. Thinly slice onions and garlic and put in with pork. Add bay leaf, salt, pepper, half of Dijon mustard , mustard powder and chicken stock to crockpot. Get in there with some clean hands and mix everything up.  Put crockpot on medium and set for as long as possible, roughly 20 hours. When you get home, use a fork and or tongs to pull the pork apart and then toss with cider vinegar, remaining mustard and fresh parsley. That was dang easy and is damn good.
